EGGS for dinner!!!
I had 2 boiled eggs before bedtime last night as they are a rich source in the amino acid tryptophan which helps you sleep better for longer by telling your brain to shut down for the night.
we have a family recipe where we boil fresh asparagus, then toss it in a big frying pan with onions, any kind of chopped meat you want or don't want - ham, sausage , kielbasa, or none. Then we put in a bunch of beaten eggs (it all depends on how big the pan is and how much you are making), enough to coat the ingredients in the pan. We then cook it all together, at some point in time you need to put a plate over the pan and flip it all over so the top side faces the bottom and it has a chance to cook too. Don't overcook it, and serve it hot. It almost comes out like a pie or thick quiche (no crust), you can cut into pie slices and serve, it is delish. You can add any ingredients you like, any herbs or spices, like mushrooms, parsley, oregano, garlic , paprika, it is like a kitchen sink type of meal.
Our asparagus growing season is late spring early summer and we enjoy this all season long as asparagus is fresh and local. It does make your pee smell though
