I wish more people would eat the stuff, because it is horrible on plumbing drains when they wash it down the kitchen drains. I imagine it clogs arteries in a similar way as it clogs plumbing drains. I like the taste of bacon, but I don't find bacon/pork fat all that tasty. I like restaurants that fry their food in beef fat, but I have to limit my fried food.

I just fried my eggs in bacon fat. I normally don't buy bacon but my old school Dad was staying with me and we got a package and cooked it up and he saved the grease. I love bacon but try to limit myself to temptation by not buying it.

curiously, I've taken to frying my eggs in coconut oil, a lot of it, and I spoon the oil on top to crispy fry the whites and leave as much liquid yellow as I can. We usually have really nice orange-y yolk'd eggs in our area
I do still keep bacon grease for some random things.
You know, you can just let the grease harden and scoop it into the trash or make soap with it or basically anything other than putting it into the drains....

I grew up south and love southern food. It is a law I have to like bacon grease But we use it for some things but not all the time. Have to say I enjoy some wilted lettuce now and then!
I also fry my bacon. I like it that way. I also use butter to fry my eggs
But, I eat just boiled eggs and a spinach smoothie every weekday for breakfast, eat healthy the rest of those days and run/work out M-F so I dont think I am too bad off having a little bacon grease on Sat and Sunday! Even get up early and make some homemade biscuits and bacon gravy about once every few weeks on a weekend too! I figure a good 80/20 (80% healthy, 20% comfort) is a fine enough balance for my health!

we go back and forth. I believe baking is overall superior, but lately my female unit has been frying the fok outta some bacon in the ol' iron skillet... not so bad .... and more 'nostalgic' authentic

Fry mine in my big ol cast iron skillet too. I mean, baking it is ok ... still like it better out of the skillet. Just throw it on a small bread cooling rack over some paper towel to drain it while cooking eggs in the little cast iron skillet Needless to say, I love my cast iron skillets. The small one I use for my eggs was from my moms first set of skillets in about 1965
