I had to buy a new infrared temperature sensor gun , my existing one tops out at 600 degrees F which is not high enough for my pizza oven needs. My new one measures past 1000 degrees F , which is more than enough for the 850+ degrees I cook at for my pizza oven. The new pizza oven below

Wow that is some serious heat. When I was in the pizza game I think our commercial ovens ran at about 550 degrees.

Yeah there are two schools on cooking pizzas, low and slow in traditional square pizza ovens most pizza shops use where they cook like 10 minutes at 550 degs. Or old world domed pizza ovens (wood burning, and gas) that cook pizzas in 90 seconds at temps of 800+ degrees.
