I'm saying ribs take too long. I need to rub them and let them rest for at least overnight and then slow cook them or smoke them for about 3 hours or so, let them rest again and then finish them on the grill.
I'm also thinking I have some left over braised lamb shanks that I could use to fill some home made ravioli. I could use the same lamb and make a curry instead.
