I always thought it was h'soo with an almost silent 'h'.
Almost like just regular su, but with a sharper 's'.
I could be mistaken though. I'm sure the people you know would know better how to pronounce their own names than I would.

I know one girl who has a last name of Hsueh and also says it's pronounced "su" ^^;

Take the Korean last name "Seo." Why spell it like that when it's easy to pronounce in English by simply writing "Suh"?
