My wife made stuffed eggplant, they are fresh from the farm right now, really good.

Well you cut them in half and boil them to soften the innards, then you scoop out the inside meat when soft leaving the skins empty to re-fill. You mix the stuff you scooped out with bread crumbs, eggs, mozzarella cheese, grated cheese, garlic, italian seasoning, parsley, and anything else you prefer. Then fill up the skins with the mixture and bake them in the oven with tomato sauce on top, a bit of grated cheese on top too. They are really good, pretty filling, very meat-like consistency.
