Leftover chicken piccata (diced up) and zucchini on NAAN flatbread with olive oil and pasta sauce with capers , mozzarella cheese, and a touch of lemon pepper and a touch of garlic salt.

every now and then I tell my wife about an old family recipe that we need to cook. Lately it has been baked rigatoni. We have a name for it in our Italian dialect that translates into "filled pasta" . We are going to make it in the next few days as we have a craving for it.
We boil rigatoni pasta (the version with ridges), and leave it semi- cooked. We put it in the oven in a casserole pan , adding tomato sauce, mozzarella cheese, grated parmesan cheese, and a bunch of tiny meatballs (about the size of marbles). We add some basil and bake it until it is all nicely congealed. I even like it a bit over-cooked so the top gets a bit crispy in the corners, but my son doesn't like it cooked that much. Hoping to have a batch of it this week.
