pulling the pizza oven out of storage for pizzas tonight, mild spell in weather is good for using the pizza oven. Pizza night at the Mazzotta household.

Leftover chicken piccata (diced up) and zucchini on NAAN flatbread with olive oil and pasta sauce with capers , mozzarella cheese, and a touch of lemon pepper and a touch of garlic salt.

Should take about 8-10 minutes in the oven.

When I win the lottery, one of the first things I‘m going to get is a proper pizza oven.

every now and then I tell my wife about an old family recipe that we need to cook. Lately it has been baked rigatoni. We have a name for it in our Italian dialect that translates into "filled pasta" . We are going to make it in the next few days as we have a craving for it.

We boil rigatoni pasta (the version with ridges), and leave it semi- cooked. We put it in the oven in a casserole pan , adding tomato sauce, mozzarella cheese, grated parmesan cheese, and a bunch of tiny meatballs (about the size of marbles). We add some basil and bake it until it is all nicely congealed. I even like it a bit over-cooked so the top gets a bit crispy in the corners, but my son doesn't like it cooked that much. Hoping to have a batch of it this week.
