Cooked up some ground turkey with onions, garlic, oregano, topped with sauce and parmesan/romano and served it over spaghetti with peas and butter on the side.

We have a place in town that makes the best burgers I've ever eaten. We had them tonight as my son loves the place, gourmet custom burgers.

The wifey made some stuffed eggplant, very good. I made a side of fusilli pasta in garlic oil to go with the eggplant. Perfect.

Rob, did your family ever make stuffed eggplant ? Ours are very meat-like , they are very filling. I call them eggplants on the half-shell lol. We stuff them on the skins.

No we always had it parmesan style. My sister made it one time with pepperoni and sausage and cheese as kind of an experiment but I felt it was too busy, it took away from the taste of the eggplant. In later years my Mom substituted zucchini for eggplant as my Dad said the eggplant was upsetting his stomach.
