I've tried making it parmesan style, but my wife and son didn't like it that much, so I never tried it again. I think it was more of the way I made it rather than the recipe. We went back to the old tried and true stuffed eggplants my mother used to make growing up and they seem to like it better.

I love eggplant even if I just sautee it with some other veggies in olive oil and some spices, I enjoy the taste.

I like eggplant too.

My mom used to make pickled eggplant and put it in jars , cut into thin strips and a bit heavy on the vinegar, it was amazing, I haven't had it for years but wish I could have some right now. I've had some store bought versions but it isn't the same.

I have grilled eggplant in a black bean sauce at a local asian restaurant and it is really good too.

Nice I'm in the mood for hot dogs and hamburgs on the grille today but I'm cooking up some chicken, may put on some sauce and mozzarella and have it with some spaghetti.

It's pizza night at our household, that means up early making pizza dough so it can proof 2 times before we use the dough this evening. Messy work.

I ended up doing one chicken breast with mozzarella and the other 2 with parmesan and sauce. Have one breast leftover still in the pan so will probably cook up one more breast and add it for dinner tonight.

Went to the Italian bakery near us and got some fresh buns and some Rosemary Ham and some cheese to make sandwiches for lunch. I picked up some pickled eggplant strips but it isn't very good, nothing like the ones my mother used to make. I loved my mother's version. My mother's were always in a strong vinegar, the commercial ones you buy are in oil. I'm taking these out of the jar and putting them in vinegar and maybe some lemon juice, I don't like the oily texture or taste of these the way they are, they got the recipe all wrong. .
