Millions of ways!

Two examples:

Mix olive oil with balsamic vinegar and a bit of oregano and drizzle it on salad.

Top a pizza shell (Boboli's OK) with chopped tomatoes, fresh basil and a little olive oil and bake it till it's done.

Pour some in a dish add Parmesan cheese and oregano. Dip in bread and serve with wine.
As a note extra virgin (I know that you can't have too many) may be to strong a flavor to cook with.

Add it to a boiling pot of pasta to keep it from sticking.

When cooking with butter add a bit to keep the butter from burning.

Use it with butter to saute.

Slice some tomatoes. Chop some basil. Sprinkle basil over tomatoes. Drizzle with olive oil. Top with cracked pepper. Yum.

You can substitute it for most other oils.

Saute with fresh garlic and onions for a spanish "mojo".

To make cuban black beans from a can: pour in from car into saucepan, add about a tablespoon of olive oil, and sprinkle with Adobo (a spanish seasoning). If you like you can also add a 1/4 of a green bell pepper and a bit of onion. Tastes like mom's!
