Keeping it central makes good sense because... well, because it's central silly! lol
I think there are plenty of options within the 'triangle' that makes up central florida: Gainesville - Orlando - Daytona. I think there are plenty of both back-roads for fun as well as main access routes for everyone to get there and back home. Those cities also offer all kinds of entertainment options of all sorts (even NON-automotive)
I also think it would be best as a minimum of one overnight stay if not 2 (friday and saturday nights). That kind of 'window' would make it that much more of a option for folks to make it to one days events.
but, as everyone knows i'm willing to travel further. However, I think the Key West run should be 3-4 days minimum just because that drive is a full day by itself.

We did the S and Camry from Jax to St. Pete (drop the kids off with the grandparents) a couple summers ago and then the S to Key West for some adult time
