I'm about to buy a beautiful '00 with 65k kms completely original excep for one "minor" modification...... Greddy Bolt-on Turbo kit, which I would like to remove, mainly because it's pretty illegal in Italy and Switzerland.

Who told you this car was "completely stock" (other than the turbocharger)?
A lot more modifications are obvious even in the photos. The non-original wheels and front suspension are easy to spot. Removing the turbocharger will entail a significant expense just in parts. Even if your labor is free. The ECU is aftermarket and you'll need to either get the car retuned or retro fit a '00 OEM ECU.
Don't pay collector prices for a car to drive. Or a car that's not a collector -- this isn't close to original.
well I saw the car and it is 100% stock on body and interiors. Suspension are aftermarket but the turbo kit is a bolt-on Greddy, and I actually downloaded the instruction manual and it looks reversible.
Also, the owner has original suspension, airbox, ECU, exhaust and everything else needed to revert the car.
So what I need to know right now is if this car can really be brought back to stock

Why not find one that doesn't have a turbocharger if you're going to take it off anyway?
I'm sure you could also get a nice 04-05 facelift for that money with around 100k km in Italy as well.
I would personally never pay 23k for a turbo'd prefacelift.
Have the retainers been replaced? How's the soft top? Arches still good?
