Had a few setbacks schedule wise but started the process this weekend. Decided to pull the tires and have them swapped out while doing the fluids etc. Hard to believe the car is 16 years old as it still has the new car smell in it.

That is a gorgeous S! If you still have the original tires, you might want to keep them. With only 2000 miles, this is a collector quality car and some collectors want the original tires. Some of them even ask if you saved the original oil filter. You may not need to drain the fuel. Modern cars are better at keeping fuel fresh. I would open the gas cap and smell the gas or remove a fuel line to see if the fuel gelled or has a sour smell. Some of the guys on BobIstheOilGuy claim to have driven cars with 8 year old fuel. I personally have driven cars with 2-3 year old fuel without ill effects.
Don't forget to change the brake/clutch fluid. Old fluid can rot the seals on the master/slave cylinders and cause leaks. The car is probably due for a coolant change too. Make sure you use Type 2. It is blue and you can get it from the Honda dealer. Green coolant can cause leaks.
I use Amsoil 75w90 in the differential and MTF for the transmission.
Make sure to keep fresh rubber on the car. These cars can quickly swap ends when the rear tires are worn or have less than optimum grip. Good luck with the car and enjoy it!
It is a QuickJack 5000SLX, picked it up off of OfferUp just for this as you can see how little room there is in that garage and dragging a floor jack around was just asking for trouble. I was able to get most things done so I could at least get it smogged and registered so I could move it to my workshop where I have a lot more room to finish things off.
