I did some research and came across a corvette forum praising the Audio Technica Pro24CM mic for the gopro. I will be ordering one before my next track day. If you google it I'm sure you could find it, but the differences are amazing.
Even the cheapest external mic in the world mounted somewhere out of the wind would be a good upgrade. I used to mount a cheapo mic in my foot well for autox and the difference compared to being up near the wind deflector with the camera was night and day.
Wind noise is probably a lot more problematic at track speeds though, so I might be comparing apples to oranges.

Next event I'm going back to asking for s2000 instructors. This one didn't have a headset and did some weird things. It was difficult but I still tried to do some things he suggested even though I didn't think it was the fastest way around the track. For example, turn 9 he told me to hug the inside of the turn and stay right side all the way down the track. Overall I did pick up a few new things from him though.

It's small and can be zip-tied to anything. Long cable means it can go anywhere. Batteries are 25 cents each when bought in bulk and last for days each. And if you break or lose one, you're out all of $20. These were all recorded with it:
