Rose and Myself looked at that instruction also about an hour and a half ago, we looked at each other funny and popped it in the oven uncovered. So not that its 10:45 and still uncovered i guess i should go look at it and cover it in the last hour to hour and a half of cook time as needed

I covered the turkey. Old habits die hard. I'll uncover when there is about an hour to go.

His work is getting in the way of your cookie consumption. I'm not sure that's acceptable. However, it is the season of giving so perhaps a cookie fairy will find a way to deliver some cookies to you!

Ok put a little sqaure of foil over the top of the breast that was browner than the rest of the turkey and than 2 little squares of the ends of the thighs one on each side. Perfect!

If the turkey has been covered in bacon, how do you get even browning of bacon without getting the bacon too crispy due to the long cooking time required to cook turkey?

one cup of kosher salt per gallon ut it's way too late to brine a bird unless you are eating it tomorrow
