If you can remember where you were when you first saw her or where you went on your first date take her there. Tell her what she means to you, and you can also write her a love letter to express all the things you think but can not seem to say. Let her know you would do it all over again.

If that does not float her boat, well, drop her like a rock and find some hot 22 year old.

thought of another one:

Handwrite in nice paper (no binder paper) her a loooong letter about everything you wanted to tell her in words but never could get the courage to, how much you love her and how much you're so lucky to have her, write about some memories you had "remember the time..." etc. FedEx it to her office with a dozen roses and make sure it gets there the afternoon of your anniversary day so that she has time to read it before you meet her that night. Then have a nice dinner that night. Her co-workers would be jeolous and she'll be touched by your personal touch in your present.

If she likes working out in the gym and jewelry, take her on a trip to a gem mine or the black hills in south dakota.
We have a Garnet mine here in upstate NY. every time we are near there I always have to go there.

Thanks to everyone for their suggestions. I've decided to have my favorite picture of us blown up to a 16X20 and mounted on to a 1/4 inch thick board.

I think she will appreciate the fact that it's about both of us, vs me or her.
