Exotic Chocolate Bars
I suggest Jaques Torres chocolates (http://www.jacquestorres.com/).
Not as exotic as the original poster's, but these are top notch.
The "gingerman" and "coffee-break" bars are awesome.
At his store, he also has an "aztec spice" (chili powder) bar that pretty good as well.
Also, in terms of gifts, why not mix her love of chocolate with cooking and buy a fondue set.

thanks for all the advice and suggestions everyone. I ended up ordering the chocolate bar gift set from vosges:

they sound really interesting so I figure...why not? however, I'll definitely check out some of the different chocolate bars you guys suggested from trader joes, whole foods, gelsons, etc. as a matter of fact, I read somewhere that the vosges bars i just bought are available at whole foods market so if any of you are interested in trying them (instead of ordering a bunch of stuff from their website) you might want to check out your local whole foods. post back here with a review if you do try them!
