I grew up shooting a Colt Combat Commander 1911...its an aluminum short frame, great quality - but old. We then moved to a Colt series 80, full frame, which was loose as hell and showed how Colt quality had hit the crapper.

Eventually got a Kimber Custom (~1200) and a Les Baer - i forget the model but it was easily $2k+. The main difference was actually the tightness of the Les Baer...very hard to rack the slide. Finishes were similar quality, and even the accuracy was similar. Les Baer i think was advertised at 1.5inch groupings at 50yards, kimber was 3inch maybe? But in a real world situation, you can't feel any difference in that level of accuracy.

Buy the kimber if price is an issue.

Wilson Combat makes some of the best right out of the box imo but, they're pricey.

I have a Kimber Pro Eclipse 2 and had a Pro Carry 2. I put close to 10,000 rounds through the Pro Carry 2 and it still shot awsome when I sold it. Sold it to buy a H&K USP. For the price that your looking to spend, I'd do a Kimber again.
