What if I don't have a camcorder :-(

Does any shipping company do notary or sort of certify the contents of a package right on the spot before a package ships out? Fedex? UPS, etc?

Perhaps one of those stores that collect mail and ship packages (like Mailboxes, Etc. or The UPS Store) would ship it for you and produce a packing list of the item(s) in the box.

A notary public won't be any help in proving what was in the box. Generally speaking, a notary's function is to act as an official witness to the identity of the person before them who is signing a document or taking an oath or any other activity where identity needs to be established. A notary doesn't verify the contents of a box or that someone's speedometer was broken.
