The best I've had is the Green River Barbeque in Saluda, NC. BTW, this is quite close to Asheville (only a few twisty roads away 
) and well worth the stop. Those headed from the South will see the Saluda exit on I-26 about half an hour or so before you get to Asheville.
I love the joint, and they even have some yummy cole slaw, baked potato salad (it rocks!0 and other assorted meatless foods so I can keep my wife happy while I chow down Carolina style.
