I'm In school for Culinary Arts and I must say His presentation Is excellent,I just finished the 7 week insruction on presentation about a month ago, and Its very difficult because first you gotta do It quickly(can't be fiddling around with it forever), second It can not look Naturally setup(must look deliberate) all this because at certain resturants ppl won't even touch the food unless It looks like a work of art.
