I was presented with a meat dish while I was living in southern China, which I found out later to be dog..... to be honest, there was nothing wrong with the meat at all, but I do admit that I wouldn't have eaten it if I had know

Whatever breed you ultimately choose (I myself am partial to my Sheltie Lucy, who will remain forever young.), I highly recommend attending a good obedience school with your dog. You will both learn how to become life partners who properly understand and respect the other's needs/desires. Many local community colleges offer such courses on the parking lot of their campus for a nominal fee.
