A flip up screen generally will NOT fit, and if it barely does you will put your fist through it when shifting into 1st, 3rd, or 5th gear. Check these threads out and see what most people do who want a display or gps or both in their car.
Personally I'll be cutting a hole in my dash, mounting a 7" touchscreen, and installing a Mac Mini to do all that stuff your asking about.
