Default Change fluids now

I'll be dropping insurance down on the S in the next few weeks and putting her into hibernation for the winter. I need/want to change the oil, diff fluid, trans fluid...would I be better off doing that now or waiting until Spring? Car won't move from December to April/May

Also, I want to add a fuel stabilizer. Is it best to have a full tank of gas (91 pump), or have it low?

Changing the trans and diff fluid is easy so I would just do it now. I would change the oil to a cheap non synthetic after its parked. Then in spring drain the cheap swill and put in your favorite synthetic. Keep the tank full if storage is cold so condensation does not form in tank.
