I think in general, oil temp over 260F is bad. Personally, I wouldn't want it going over 230F.

At what coolant temp do the fans kick on? On my Nissan, they kicked on at 212F and turned off at 204F.

technically you need atleast ~212F (boiling point of water) to burn off the water. However that's just where it starts to boil so I would venture 220+ to be actually useful. I remember BMW said dangerous oil temps were 280F where failing point was 300F so that's what I go off of since Honda has never said anything on the matter.
this makes sense to me
and I think besides i have seen that most analog oil temps go up to 300F or so.

i see 5 bars only for a few seconds just as the fans start.
and aslo right now its very hot here it can get up to 95F in the middle of the day and 60-70% humidity.
but what about the oil temp?
my father drives a turbo diesel vw touareg and he have a oil temp gauge there and it never pass 212F.
I see 3-4 bars normally. If Im at a steady cruise I see 3 bars. Stop and go traffic I see 4 bars. Have seen 5 bars once after a long boosted highway run and then stopped at tacobell and sat in the drivethru. I saw 5 bars for oh 5seconds.

Fans on at 200-205 and shut off at 190-191 as per my external water gauge (not using the OEM water gauge)

Are you using the modifry ECT fix?

5 bars (205-220) is perfectly normal with the ECT fix for the AEM EMS.
This is what I was thinking too. LOL. I was like WTF? I guess I need to data log to see.

when i was supercharged the oil temp rarely got passed 180. Now that im turbo its average is about 200. but never gets passed 210.

if your not boosted i'd be very concerned why your temps are soo high
