Does stock block simply mean no aftermarket parts like rods, etc, but remachining may have been performed, or does it mean untouched, unopened?

Stock block means never been opened and everything the way it was from the factory. If you run a good oil with ZDDP like Amsoil, the stock bearings should be fine with big power for quite some time. I was making over 800 whp on the stock block for a long time and never had an issue. As a matter of fact, when I had the block torn down and built, they said the stock bearings looked great. One thing you have to be careful with on the stock block are the ring lands from what i have heard. You need to be very conservative with the tune when making big power. If I hadn't decided to go ahead and build the stock block, I would have pushed mine to near 1000 whp, but decided to go ahead and build the whole car.

I didn't catch what the output was for the OP S2000? Must be around 800-900whp no?

Do you regret not staying with the stock motor? How is the built one working out for you?

Nah, with what I'm going for, I knew it was time to build it. It's at a shop getting finished up now, haven't run it with the built engine yet.
