I did a turbo kit on my07. I didn't read through your post yet, but the things I have would have done differently.

Go with a kit rather than piece together.
Go with a simple return modification and not the whole fuel system
Go with smaller injectors than 2000cc.
Go with Flashpro rather than AEMV2.
Go with a simple 93 pump gas tune for moderate power rather than go for broke and then be broke.
Go with a single clutch rather than a twin disc.

Dont go to turbo...I could add more lol.

Well lol I only checked off two from your list which were flashpro and single clutch I will do pump gas and e85 I'll be running two maps. The 2000s maybe be overkill but I got a good deal on them. It's too late now! I'm already in lol

i have the 2000s and they suck for start up and idle. They also don't flow great. Im downgrading to 1300s. I also wanted to do two tunes, but draining your tank and filling back up sucks as well. I tried that. I have a E85 tune but run pump sometimes and it runs very rich.

I also know your struggle. I have had a horrible time boosting mine. Its been down for 3 years.

Who tuned the car? I've heard some people actually don't have issues with start up and idle with e85 only with pump

Cold start with E85 isn't great. The car idles around 1000-1100 rpm. Start up suck completely at 3000rpm and drops, but I need to have the car retuned.

It's a DBW thing. Since the stock ECU still controls the throttle body, it fights with AEM for idle.

When I was turbo the 2000 injectors took some tuning to idle properly. I found advancing ignition timing at idle stopped a lot of the oscillations etc. I had idle set at 1,000rpm. Will they idle like 1,000s? No but it was ok with E85. If weather is colder add more starting fuel and injectors should fire up without issues on E85. This was all done with kpro also.
