I could be wrong, but I think you're backwards on the direction of oil flow. Doesn't it go out the 120 degree fitting that's on the backside of the sandwich adapter, then to the filter, and then to the mocal?

Sounds like you're measuring the temp after it comes OUT of the oil cooler, not as it goes in.

Then that would mean it travels through the filter first then up to the oil cooler. Sounds backwards to me. :/

I double checked the install manual earlier and it definitely refers to the fitting on the "exhaust side" of the sandwich adapter as the "OUT" fitting.

Why would it be backwards to filter and then cool the oil? Does it matter what order those two are done in?
