My friends and I ate a big plate of these things while vacationing in Hong Kong.
The restaurant stir-fried them with salt, pepper, garlic, and chili. The meat was very tough and not worth all the effort of breaking the hard shells.
In Chinese, mantis shrimp literally translates to "piss head shrimp."
