It would appear the easiest way to get these is the appropriate seat covers or having the seats re-upholstered. You can probably get door cards recovered as well.
US Import data shows 2166 pre-2006 cars with the Red-Black interior (helmet hole went away in 2006). I personally can't tell the color of the centers of my seats when sitting on them. I know they're black but the seats don't care what color they are.

They were only available in 2004-05 on silverstone and sebring silver cars.
Per https://www.s2ki.com/forums/s2000-ta...2000-s-729838/ they're not rare, however finding 13-14 year old seats in good condition is.

I got pretty close! Clazzio covers on 06 seats.... found some super nice door cards from a junk yard, and had the tuning shop make me a red leather shift boot, it came together VERY well.

How'd you get these? There's nothing later than 2005 shows on the Clazzio webpage. I'd have personally skipped the shift boot and buttons on the mesh pocket but rest is stunning!
