Eibach makes springs of multiple diameters, spring rates, and lengths- literally almost anything you can think of, they can do. You may want to contact the manufacturer of your coilovers to find out what they recommend. I'd be concerned with going mega stiff and losing all damping control- i'm no shock engineer, however, and much smarter people than me can chime in on this one. plus, too stiff springs on the street will rattle your fillings out and eventually just piss you off.

It sounds like you have a wheel fitment problem which is fixed by doing the proper fender work. That is the way to go about solving the tire rubbing issue, not running a suspension so stiff that it won't compress.
