Fairly easy installation, thanks to all those who have posted tips!
The GC parts seem simple but very well engineered and beautiful construction. I put them on my stock shocks for now. The instructions where sparce, but enough to figure it all out. You disassemble the stock non-adjustable coil-over, knock off the lower spring perch (a few whacks with a rubber mallet and it dropped right off), cut down the bump stop with a hacksaw (it's foam/plastic, so it cuts easily), and reassemble the coil-over with CG's machined parts and Eibach springs.
All corners where pretty easy, except for the left rear, as some have mentioned, due to the gas filler and vent lines. I was able to get them with a deep socket and 4" extension on a flex ratchet.
I went with the GC recommended 340/380 springs, and while I have only put a few miles on, it seems to have noticeably less body roll but still very livable on rougher surfaces. GC also offers a host of other spring rates, and the springs are reasonably priced. Rumor also has it that they will swap out your springs for a short while until you are satisfied with the rates.
I set the adjustable perches at about half of their adjustment range, and the car is just about at stock ride height. There is still a ton of adjustment for lowering the car more, which I likely will do at the same time as I corner balance it.
I am having a little bit of a tough time, however, finding someone with corner scales that will let me use them for a fee. One shop has them, but they want me to sit in the waiting room while they do the work (even though they have never touched an S2000 before), then come out to give me status/updates etc. All for only $80/hr!

Overall, looks like a great, reasonably priced solution for adjustable lowering. Can also be used with higher end shocks (Koni and GC shocks are both tested combo's) for a performance level that I expect would rival the well known Japanese coil overs at a significantly lower price.
The GC stuff kicks ass, at a price that is fair. Talk directly with Jay at GC, a huge guru and a funny guy to boot.
I have no experience with their stuff on S2k's, but I have a chi chi set of Koni Double Adjustable coilovers to go on my M3 on the way, for install this weekend. A buddy has Koni SA's GC c/o's on his car, and they rock, clearly better than my current H&R c/o setup (these are essentially equivalent to the PSS kits from Bilstein).
