For 40, 60, & 100 I'd use 2, 3 and 4 respectively. However, for 85, I'd probably be in 3rd. It's a judgement call, and depends on how quickly you can shift. I haven't done the math, but if you are above 6k RPM in 4th at 85mph, you'd probably be OK doing 4th there instead of 3rd.

I know you are trying to learn about the car, that's great. Just please keep in mind that racing at those speeds is totally inappropriate for the street. Running the car thru 1st and 2nd on a back road is probably no big deal - add another car, two more gears, and traffic, and you are asking for a lot of trouble. Also note that while you may have skills and restraint, the 16 yr old in the other car may not. If he crashes and kills someone, there's a good change you will be held partly accountalbe - and you can expect little sympathy or leeway from the courts.
Most of the people that post in this forum are driving their cars on tracks, not street racing.
If you want to have an absolute blast in your car, sign up for a Chin Motorsports track day. They have events at Homestead, Moroso, and Sebring, which are within reason for you.
You get an instructor in your car with you all day, plus to short class sessions on driving technique, and 2 run sessions with only novice drivers on the track. Plus many other run sessions with experienced drivers. There is no wheel-to-wheel racing; all passing is on the straights and only with a wave-by from the slower car. Very safe, controlled, and fun as hell. Costs $250 for the day and $50 for the instructor.
If you prefer drag racing, Moroso has a strip that has Test-and-Tune Wednesday and Friday nights. $15 and you can get 5-10 runs in. Tons of nice cars show up; imports, muscle, and some exotics. Just MUCH more fun hauling ass around a road course, without the 30 minute wait between 14 second runs.
