I would definitely suggest the full if you have additional sensors plugged in because you can get alarms and such for your sensors.
I was using a beta unit this weekend for the MidOhio NASA race.

The ones that say 59:59 were taken in the paddock while not logging, when your on track you see the current data for that variable.
Overall very slick and also completely configurable to suit your taste.
You can see the config software for the DASH3 in the latest V7 download from the Race Technology site.
(Recommend that you do a uninstall before you install the new version or certain files from the previous beta config program won't get overwritten and cause you problems.)
Also the online wiki is mostly up to date on DASH3 functionality:
