C5 / Rustang / Eclipse/ ITR...
I had a 91 Mustang LX 5.0 with stiff shocks and fat tires and it didn't "hang in the twisties" with anything other than a pickup maybe. It was fast in a straight line, but you better slow down in the turns.
If you consider changing the entire rear suspension out for the independent suspension setup minor, than I guess you can say 5.0's are good track cars.

I don't doubt that at all. I remember reading several articles in the early 90's when they were developing that suspension setup stating cars were getting around .95g's with it and they did do well at the track. I just wouldn't call it a minor mod.
Well, a car with a high skid pad number doesn't mean it will have a highs slalom mph. Slalom is going to be more about suspension setup/and reaction, ofcourse tires help. But when you are on a skid pad, you load the suspension one way going one direction, and that's it. With the right tire, be it big or slicks, you will pull high g's.
