I've tried, but as you approach empty, I've found that it's really anybody's guess as to how much fuel is left. I usually fill the tank, drive to empty, and fill again, so I have no idea what's left in between. When I'm down to one bar though, I usually have at least two gallons to go. I've also noticed that my driving style gives me 26-28 miles/bar. However, this would vary greatly from driver to driver.
A much more accurate way to keep track of gasoline usage is with the trip odometer. I don't even bother with the fuel guage, except to feel guilty when it has shown zero bars for more than 20 miles.
I've kept track of mileage long enough to know that I get about 20 mpg for normal driving and 27 on the open road and the car has two separate trip odometers, so there is no excuse for not using one of them. If you want to look at my carefully documented mileage over 5780 miles click here.

From Austin to Dallas this past weekend I got 25mpg top down, and coming back I got 27 top up. I may or may not have been doing about 90-100 most of the way there and back.
Phoenix to Denver last week, I may or may not have averaged 87mph (including stops) but I got a bit over 27mpg. I got just under 30mpg on a Phoenix to San Diego trip last summer. I think the key is to drop it into 6th gear while cruising.
