They write you a check for the assumed value of the car less your deductible.
You often have to fight with the adjuster about the actual value of the car. After my mom hit a deer, her adjuster tried to give her almost 2k less than the local area "average" price for a similar car because the metropolitan areas (3 hours away) would average less.

They won't total it on you, but make sure you get every penny from the ins that you can...they're gonna try to low ball you.
