Check Engine light again - Engine Coolant sensor

For the third time, my check engine light has come on. All 3 times it has come on, it has been after extended down time, during which a temperature swing colder occurs. It immediately comes on about 5-15 seconds after starting, during the warm up cycle. The last time it came on, I had Honda scan the code. The code was engine coolant temperature sensor, specifically engine coolant temperature too low. The thermostat opens and closes normally, and coolant levels are optimum. I have not yet even touched the cooling system in any way on this car, so it's not due to modifications performed. The dealer recommends having the sensor replaced, I will probably do that, but I also wonder if it's not the ECU flipping out.
Has anyone else had similar problems, and if so, what was the resolution (if achieved)? Much thanks in advance.
