Its a straight shot back through the muffler opening to where they made one of the cuts. If you can get an inspection camera back there, you can see what their hole looks like. I would do that before hacking off their pipe and doing a do over.
I bought such an inspection camera from Harbor Freight tools. You can also buy something that connects to your cell phone.
The cracking and burbles you hear on newer sporty cars mostly comes from the tune, not the exhaust. It's fuel that lights off in the exhaust, dumped in off throttle by the ECU. Basically, it's fake.
Older carbed stuff does it because the fuel is still flowing off throttle, some race cars do it because of cam overlap drawing unburned fuel into the exhaust or it's done on purpose by the ECU in cases like blown diffusers in F1.

I don't think you are going to find an exhaust that will have crackle and burble on an NA S2. You are mostly only going to get sound volume. My Greddy Dual has a slight popping sound on start-up, but definitely doesn't sound like the sport exhuasts on some OEM cars.

If you do manage to get an exhaust that backfires...it won't be quiet. A cutout near the header would get you tons of crackling and popping. But you'll go deaf in the process.
Is your car a 06+? Using a Flashpro, perhaps you can find someone to tune the exhaust backfires in.
A 70mm single will make the S2000 sound amazing. Especially at high revs. Plan to spend some money. Maybe a T1R 70EM and a 70mm TP. Or for more $$$, a J's 70RR Titanium. Both are loud (the J's is louder). Both drone. Neither make lots of backfires..but do sound fantastic.
Its a 4cyl NA car. What kind of sound are you looking for? Like...what type of car makes the sound you're lusting after?
FWIW after I had the UK mod done, I then put on a high flow cat to get ready for a tune. I found that to be another "step up" in sound and because I apparently have too much time on my hands I made a video. You'll need to use headphones to have a chance to hear the differences.
If you want something like the "cracks and burbles" from the Fiat Abarth, Alfa 4C or [insert euro car here], it's not going to happen. Closest thing is a 70mm+, single, canister type exhaust system (ie. something that is VERY loud and flows a lot)...then it may have some random burbles here and there but your ears will be bleeding afterwards.
No offense to you, but people like you are usually hard to please when it comes to an exhaust system. There's a very fine line between "too loud" and "aggressive sounding" and "nice sounding" all of which are very very subjective. Not saying those are what you asked for, but it's what most people ideally want until they find out that they have to make sacrifices here or there.
Of course, the most helpful and correct answer is that you need to ride in other S2000's with aftermarket exhausts to get an idea of what you want. If that isn't an option in your area, just go with the tried and true suggestions for "quiet" exhausts, HKS hi-power dual, Tanabe, etc. My personal recommendation is the Mugen exhaust. It is barely louder than stock (maybe 5-10 db over stock --wild guess). I love the way the HKS hi-power sounds, but it still may be too loud for you.
My dad (who is a pretty good welder) did mine up for me a few years ago. Who ever did yours, did a terrible job, see pic below of mine. When with approximately 1.75" and it sounds pretty damn good if you ask me. I do in fact get some pops and cracks on overrun at redline. No droning. Also, he hit it with a can of ceramic paint to protect it, looks like it came from the factory.
