Newb question: What Makes Coilovers Different?

I'm sure this is a stupid question, but what exactly are coilovers and how are they different than the stock parts? Any kind of basic suspension info would be great.

The benefit of fully adjustable coilover is that you can adjust ride height and on the more expensive kit you can also adjust the damping of the shocks such as rebound and compression.
