You definitely want to get the cars theyre comparing yours to. A friend just went through this with his CR being undervalued on total and its common for the insurance company to contract out the service to compare. The one his insurance company used is known for being quite shady, which allows them to get the contracts as being the lowest bidder/find the cheapest payout. When he requested the list of comparables for the low appraisal for his CR, on the list were 2 non-CR's and they were both the same car, just at different dealerships (not updated/in between transport). He brought it up, the insurance company was just as confused as he was and they went in circles a couple times with the same thing, with them providing the same car for price comparison. I believe they are now at the point where it has to go to a judge to decide the value. Not a fast process I imagine as its been over a month now.

So I wanted to let this thread die. It is a bad memory. I got some good advice from this thread and I want to thank all that contributed. Perhaps it will help others in the future that have to deal with a similar situation.

For those looking for closure:
I did end up purchasing another S2k. I will post updated pictures and details when I have taken care of logistics on the car (and hopefully given it a wash). I am happy with the final outcome.

I am still working with insurance on my settlement claim. In order not to jeopardize my negotiation I'll keep the details under wraps for now. If anyone is really interested in the numbers you can PM me with any questions you have.
