I have seen there are only two tires for the stook but is that still the case? Anyone know if any other tire company has plans of creating a tire for the S2k?

There are many options. Try a search (upper rh corner of the "page") for "replacement tires" and you'll find a wealth of info.
Tire rack lists these possibilities (w or better speed ratings only)
