I'm thinking about buying a S2000 (used), and was wondering if the bars behind the seats are a true rollbar, or they're just for style.

yes they are for rollover protection

 

they work.....

this car is built like a tank.... search on this forum.. and you'll see a few people that have flipped the car, or drove off a cliff and have walked away from it with a couple of scrathes and a bruised ego....

 

They are functional, but some tracks require an aftermarket rollbar even if you run with a hardtop in place. Check your local area tracks if that's a concern.
