You get better R comp tire options with non-stag and the ability to rotate the tires. It really is a track-only application.

Its a complete system - tire width, alignment, suspension settings - they all work together, biggest thing a simple tire swap will do is upset the balance between front/rear grip. Bigger front rubber means more front grip, so instead of the car going neutral or understeering it will over rotate easier when everything else is the same.
