It all depends on where you park, and what the weather is like, and so on. Just because people in Vegas park with their top down does not mean you can do the same in Seattle. Practically everything inside the car is removable given enough time and the right tools -- from shift knob to radio to seats to steering wheel to ...
Difficult to say. If you leave the top down, a random bird or cat might come and piss/crap on the interior (it happened before). Or someone might dare to reach in and steal something. Or it might rain and screw up your interior. Lots of situations. Seeing that you also live in Vegas, the only time I'd leave the top down is when I'm sure there are no stray animals around, your surroundings are good and friendly, the sky (and the weather channel) predicts no showers, and it's for a short amount of time preferably on my driveway or something similar to that.
I park the car with the top down inside parking structures all the time. Never had any problems.
Outside I don't, just in case of rain or birds or even just to keep sun off of the interior.

We have one of the fastest power tops in the industry. It's gonna kill ya to put it up and lock it each time you park? We see posts from time to time about birds crapping into the car, getting caught in a sudden downpour and then wondering what to do about the interior, about having garbage (eggs, spit, cig butts) tossed into the car by jeolous passers-by and people reaching in to grab your nickel in the coin holder.
