I've noticed it as well. I think it's due to the high compression characteristics. Once you remove the spark, the inertial momentum of the pistons/crankshaft/camshaft suddenly are forced to slow down in sharp steps compared to the typical family sedan with 8.5/1 compression. I would further to add that owners with lighter flywheels will experience an even more pornounced effect of what you've described.
one way to know for sure:
go to a group meet, leave your car running and have a long-time owner shut down your motor while another couple stand around. if they think it's weird, it's weird. if not, enjoy your new baby.
