What would you do?
Your insurance will take care of it, and will go after the other company. If it comes down to it if you have a good company, they will take legal action if necessary. You'll have to front the deductible (which you'd get back, if your insurance is successful). Or you can play the waiting game. It just depends how fast you want it taken care of. You can also get an estimate, and if it falls under $5000, you could always sure the company, through the damages incurred by the valet driver. If you win the case his company would have to front the money, since the damage was done while he's working.
Either way, if they're playing hardball you'll either have to front the deductible or wait. Your call.

As an insurance adjuster once you get your insurer involved you have a claim my friend. Since your insurer is involved get them to repair your vehicle. They will then pursue recovery on your behalf. Your other options are a) file a small claims court action, very inexpensive. You can then represent yourself at court. The judge will decide your case. b) hire a lawyer and sue their ass. End of discussion. In the end it's your word against theirs.
A lot of parking garages/valets have disclaimers that they are not responsible for damages or theft to/from your car. Of course, this shouldn't hold up in court, but I suspect attempting to deal with the at fault party directly will get you no where.
You shouldn't have contacted his company directly, you should have given all the info to YOUR insurance company and let THEM contact his company. When you contacted them they knew they were dealing with an individual who might be easily intimidated. They know it will cost you money to hire a lawyer to sue them so a claim denial is almost automatic. They want to see if you'll fight for it. The valet guy admitted fault, how can it be a fraudulent claim?
His insurance company is more likely to write you a check if your insurance company files the claim with them - they know your insurance company has lawyers with experience in dealing with this kind of shit.

From what i heard, your insurance will pay for the damages. Than they will attack the valet's insurance company for what they paid you to fix the car. So your insurance is just fronting up the money.

It does look like you're very lowered and have lower offset wheels. That does increase your risk of fender damage on turn in and they may not be liable for damage incurred secondary to your aftermarket modifications. The rear scuff, yes. Fenders, probably not.
I work at a valet company, if we damage customers cars we fix the damages. I suggest you just contact whoever the manager is with that valet company and do a claim with them. make sure you have your ticket if they gave you one and a receipt.
