Why did they stop making S2K?
As much as I love my Ap1, I can be realistic. The current trend in high performance lightweight powerplants is the use of turbocharging. One would want, perhaps, a 2.0 liter turbo 4 putting out 260+ horsepower, and getting better fuel economy than the Ap1/Ap2. While I am thrilled with 9000 rpm, ultimately I would be thrilled with any engine that propelled my S2K rapidly and efficiently. A major engine redesign would have been necessary to remain competitive. And, of course, the market for an essentially 'pure' sports car is fairly limited to begin with.
I think the real question is why wasn't there a successor to the S2000, and that has been answered within this thread: lack of market demand. The S2000 had a 10 year run, which is really impressive for any production car. Yeah there were changes throughout the years and 2 different models (AP1/AP2), but from a marketing perspective it's very much the same car.
The saddest part is not having a follow-on product ready. S1200 would be about right for me...

Because people stopped buying it. Great car, love mine I hope someday Honda makes an S3000 or something like that.
