Will I fit in a S2000???
6', 195, all torso. My head just fits under roof, with less than 1/2" to spare.
I don't think seat mods are going to be enough for you. There is a thread where someone used an aftermarket seat and measured about 4" of seat lowering compared to stock.
If you can find a seat that you fit into, and more importantly fits into the car, and you mount it as low as possible, I think there is a decent chance you can fit.

I am 6'4" and 275lbs (19%bf) and I feel that I am about as tall as you can be in that car. Weight-wise I have plenty of room and my head also has a lot of room, but my knees just touch the dash with the seat all of the way back. So if your legs are even an inch longer than mine, I'd say you are going to be very uncomfortable.
As a taller fellow at 6'2" (who is getting chubbier by the day at his age) I can tell you you'll likely have some problems. I have to dip my head below the windshield frame to see any traffic lights with the top up. My seat is also pushed back almost to the absolute max. I'd be more comfortable with it all the way back but it would squeak against the rollbar trim. Only one way to find out if you fit tho! I know very tall people who fit and some that do not. Tends to be the upper body to lower body ratio. My friend with a long upper body can drive mine with a helmet (autox) but cant with the top up :P
It is better for tall people than a miata, but that does not say much.
Another friend is probably 6'4" or so and is probably 260ish. He can drive the S2k but not a miata... well.. .ok he can drive the S, but his thighs are wedged under the steering wheel ... but he CAN turn the wheel if he needs to
But yeah, best way is to sit in one with the top up. If you ever plan to track or autox, take a helmet when you test fit.
