Coilover Setting
I would just set the ride height where you like it, have an alignment done and call it a day. Everytime you raise, and lower the car you potentially throw your alignment off.
Maybe the track heads on here could better answer your question about adjusting height on track days, I would be surprised if any of them do, unless you are a hard core racer. Wheels mounted on R comp tires would be the only thing I would think you would change at the track.

I pretty much have the same attitude as you.... I want to set it and forget it... I'm lazy
I probably won't bother changing my settings for track days...but having said that I do want to get it right the first time.
I was jsut curious as the spring rates of stock I belive are:
F: 3.9kg/mm
R: 5.2kg/mm
And with the Zeals they are 6kg/mm. So I was wondering if anyone recommended changing ride height for better performance.
I like how the car sits now... 1inch above each tyre. But is that the 'right way' to get good performance?

i have just installed some coilovers too. But have found the ride to be heaps bouncy! I think its because of the damper settings? i might have them on too sitff?
drove it down parramatta road (sydney) and it was bouncing all over the place. Would stiff damper or soft be suitable for street? my car is lowered about 2.75" all round. but it was that height on stock shocks and *ahem* compressed springs (dont flame me! was previous owner) and the ride was some what reasonable....
any suggestions. *sorry dont mean to intrude on ur thread*

it's not totally as low as you can go.... but as you know in sydney the roads are crap and some of the speedbumps are big. There are some I know I can't make over so I take an alternative path... here's some pics:
